Herbed Potato Salad

It is mid November and there is nothing left in our flower-bed garden to eat except a few herbs.  I gather parsley and chives.  In September I had cut the chives back and they have re-grown fresh spears, although the plants are droopy from the cold.

cut the fresh herbs with scissors, removing the stem portion of the parsley. I cut boiled potatoes and a couple hard-boiled eggs and mix with black pepper and salad dressing and my salad is finished.

However, with potato salad, you can always add more, so I add chopped ham, grated parmesan cheese and a sprinkle of paprika. The bright green fresh herbs gave life to the salad.  If fresh herbs are not available, a chopped dill pickle will provide color and flavor to a dull salad.
